I never would have thought making one's own mustard would be such a treat, but after reading the book and following the recipes, I am hooked. (As are many of my friends, since homemade mustard turns out to make a great gift.)Most of the mustard recipes call for a lot more salt than I think is necessary, but that's the only adjustment I deemed necessary. The easy-to-follow directions work--the results are delicious.
Don't miss the Chinese Toasted Sesame mustard and its accompanying recipe for Albacore (or Ahi, which is what I've always used). It is an absolute winner.
