Aimed at nothing less than totally restructuring the diets of Americans, Eat, Drink, and Be Healthy may well accomplish its goal. Dr. Walter C. Willett gets off to a roaring start by totally dismantling one of the largest icons in health today: the USDA Food Pyramid that we all learn in elementary school. He blames many of the pyramid's recommendations--6 to 11 servings of carbohydrates, all fats used sparingly--for much of the current wave of obesity. At first this may read differently than any diet book, but Willett also makes a crucial, rarely mentioned point about this icon: "The thing to keep in mind about the USDA Pyramid is that it comes from the Department of Agriculture, the agency responsible for promoting American agriculture, not from the agencies established to monitor and protect our health." It's no wonder that dairy products and American-grown grains such as wheat and corn figure so prominently in the USDA's recommendations.

Willett's own simple pyramid has several benefits over the traditional format. His information is up-to-date, and you won't find recommendations that come from special-interest groups. His ideas are nothing radical--if we eat more vegetables and complex carbohydrates (no, potatoes are not complex), emphasize healthy fats, and enjoy small amounts of a tremendous variety of food, we will be healthier. You'll find some surprises as well, such as doubts about the overall benefits of soy (unless you're willing to eat a pound and a half of tofu a day), and that nuts, with their "good" fat content, are a terrific snack. Relying on research rather than anecdotes, this is a solidly written nutritional guide that will show you the real story behind how food is digested, from the glycemic index for carbs to the wisdom of adding a multivitamin to your diet. Willett combines research with matter-of-fact language and a no-nonsense tone that turns academic studies into easily understandable suggestions for living. --Jill Lightner

Wonderfull! This is the best book out there, I bought many but this one was by far the best! My daughter was only 10 months old when diagnosed. Initially I thought, it wouold be pretty easy to avoid gluten, oh well it's not and I got a bit overwhelmed I still sometimes do! It's hidden in labels such as "natural flavoring" or "coloring" ect. , who knew Soysauce is highly glutenous and while Malt is very glutenous, Maltodextrin on the other hand is not! She wrote the book so easy to read, with lots of little laugh-teasers in it and so you can start in any chapter you want. She herself is a Celiac and has been through all the trials and errors we have been through and or are going through! She helped in every aspect of learning the glutenfree diet and how to live with this, including explaining the desease or diet to people and so on! There is nothing NOT covered!

There is only ONE thing in the book I do disagree totally and that is, that you could use one toaster for both breads, glutenous and non glutenous, you'd just have to carefully whipe the grits inside! Besides risking a new hair-do if you forget to unplugg the toaster first you could never just wipe the gluten off the griss it's that sticky! Since things get hot in there there is no way you can get all of the gluten out and since traces even make the Celiacs sick, my daughter inlcuded, I don't think this is save. I recommend to get a toaster with 4 slots.

I separated the toaster with a big black permanent marker, marked on top several times around the two to-be glutenfree slots including a fat middle-line, as well as the pushbutton and the front. In those four-sloters you can take out the crumble-drawers individually one for two at a time, it is perfectly save to use one toaster for both breads. You just have to pay attention that you do not put glutenous bread in to the glutenfree slots, I had never a problem with it and even though we use both sides everyday, my daughter never had a issue with cross-contamination ever and you don't have to have two toasters!

Good luck, being gluten-sensitive or Celiac sucks, but once you got the hang of the diet (which in average takes about a year until you know ALL the traps and tricks and what not)- it's a lifestyle and becomes easy. I'm on my way there, but still have a bit to go! In either case, I'm the proud parent of a little celiac!

First, determine your health and wellness goals. Do you want to lose weight? Do you have high cholesterol? Is diabetes a problem in your family? Based on your individual needs and goals, THE SPECTRUM has examples of six individually-tailored lifestyle programs ideally suited for you: lowering cholesterol, losing weight, lowering blood pressure, preventing/reversing diabetes, preventing/reversing certain types of prostate and breast cancer, preventing/reversing heart disease.

Each personalized plan in THE SPECTRUM has 3 components: Nutrition, Stress Management, and Exercise.

The Nutrition Spectrum
The Nutrition Spectrum consists of five groups. Group 1 is the healthiest end of the spectrum and Group 5 is the least healthful end. To determine your current place on the Nutrition Spectrum, find the group that contains the foods you tend to eat most of the time. Then, according to your needs, preferences, and goals, decide how far and how quickly you want to move in a more healthful direction. For example, if you typically eat predominantly foods in Group 4 and you want to lower your cholesterol 50 points, begin by incorporating more foods from Groups 2 and 3. If that’s sufficient to achieve your goal, great; if not, you can move more towards the healthier end of THE SPECTRUM by consuming more foods from Groups 1 and 2.

In general, the closer you move towards Group 1, the more benefits you’re likely to gain and the more quickly you’ll experience them. If you’re healthy, you many not need or want to make very many changes at all–the “ounce of prevention.” On the other hand, if you are trying to reverse heart disease or diabetes, you’ll probably need to make bigger changes–the “pound of cure.”

The recipes by Art Smith for THE SPECTRUM are designed so that each base recipe is in Group 1. Depending on your health and wellness goals, each recipe offers healthy variations. For example, the Vegetable Chili recipe is a delicious version of a classic recipe that begins in Group 1 with predominantly plant-based whole foods that are very low in fat, sugar, salt, and calories. Variations listed at the end of the recipe include adding a cup of pitted higher-fat black olives (which moves this recipe to a Group 2 dish) and/or adding one pound of turkey breast sausage to the recipe (which moves this recipe to a Group 4 dish).

The Stress Management Spectrum
Stress can have a negative impact on just about every part of your body. It can suppress your immune function, cause a heart attack or stroke, increase your risk of cancer, delay wound healing, promote inflammation, cause you to gain weight, impair your memory, cause depression, exacerbate diabetes, and worsen sexual function. Just for starters. Stress also makes you age faster even at a genetic and cellular level.

Some people thrive on stress, and it doesn’t cause them to get sick. Studies have found that they can turn it on when needed, but they can also turn it off.

They have appropriately elevated levels of stress hormones at work during the day, but their stress hormones drop sharply at night. In other words, they can turn it off. In contrast, people who feel chronically stressed and anxious have stress hormones that remain elevated, and this predisposes them to a wide variety of illnesses.

Stress-management techniques can help you turn it off. They are not about withdrawing from the world; rather, they enable you to embrace it more fully and effectively.  When you're feeling less stressed, you can think more clearly and creatively, making it easier to find constructive solutions.  When you’re less stressed, you’re more empowered.

THE SPECTRUM provides you with the fundamental tools for stress management. These include:

A DVD of inspiring, beautiful, and peaceful guided meditations by Anne Ornish is included with every copy of THE SPECTRUM. Anne is Vice President of the non-profit Preventive Medicine Research Institute where she directs all activities related to stress management training and psychosocial support. She has advanced training in yoga and meditation and was featured on the cover of the August 2006 issue of Yoga Journal magazine.

This DVD has guided meditations of different lengths depending on where you are on the Stress Management Spectrum. Even one minute a day has value; those who would benefit from doing more are given the tools and resources enabling them to do so.

The Exercise Spectrum

You already know that exercise is good for you and that regular, moderate exercise is one of the best things you can do for your health and well-being. What you may not know is that new research is showing that exercise beneficially affects your genes, helps reverse the aging process at a cellular level, gives you more energy, makes you smarter, and may even help you grow so many new brain cells (a process called neurogenesis) that your brain actually gets bigger. Really.

Here again is another demonstration of the theme of THE SPECTRUM: your genes are not your fate. The choices you make each day in your diet and lifestyle have a direct influence on how your genetic predisposition is expressed–for better and for worse. You’re only as old as your genes, but how your genes are expressed may be modified by exercise, diet and lifestyle choices much more than had previously been believed–and more quickly.

To gain all the health benefits of regular exercise, you don’t have to join a gym, hire a personal trainer, or organize your life around 10K’s. For example, in the Women’s Health Study, a major ongoing research project involving tens of thousands of women, those who walked briskly for just 60 to 90 minutes a week–just 15 minutes a day–cut their risk of death from heart attack and stroke in half.

Do what you enjoy, make it fun, and do it regularly. That’s it. THE SPECTRUM shows you how.



FOODS IN THE NUTRITION SPECTRUM

Here is a basic breakdown of the foods in each group of the Nutrition Spectrum:

Group 1
These are the most healthful foods, predominantly fruits, vegetables, whole grains, legumes, soy products, nonfat dairy, and egg whites in their natural forms, as well as some good fats that contain omega‑3 fatty acids. These are foods that are rich in good carbs, good fats, good proteins and other protective substances. There are at least 100,000 substances in these foods that have powerful anti‑cancer, anti-heart-disease and anti-aging properties.

Group 2
These are also predominantly plant-based but somewhat higher in fat (predominantly monosaturated fat and polyunsaturated fat) such as avocadoes, seeds, nuts. Oils are included but in small amounts, since they are so dense in calories. Group 2 also includes foods canned in water (rather than sugary syrup or oil), canned vegetables (if sodium is not too high), low-fat dairy products (1%), decaffeinated beverages, low-sodium soy sauce, and so on.

Group 3:
These foods include some seafood, some refined carbohydrates and concentrated sweeteners (in moderation), some oils that are higher in saturated fat, some reduced fat (2%) dairy products, margarines free of trans fatty acids, sweeteners containing high fructose corn syrup, and higher sodium.

Group 4
In this group foods contain additional fat, higher animal protein and fewer protective nutrients. These include poultry, fish that are higher in mercury, whole milk/dairy products, margarine, mayonnaise, pastries, cakes, cookies, and pies.

Group 5
In general, these foods are considered the least healthful. They are the lowest in protective substances and are highest in “bad fats.” Some food included in this group are red meat, egg yolks, fried poultry, fried fish, hot dogs, organ meats, butter, cream, and tropical oils.



We all need to find our place on the Nutrition Spectrum that’s comfortable and congruent with our own personal values as well as with our health needs. And it may evolve over time. The point of THE SPECTRUM is to provide you information that you can use to make informed and intelligent choices. Only you can decide what’s right for you, for only then is it sustainable.

In many ways, The pH Miracle is reminiscent of an earlier generation of diet books. Much of the focus is on an intestinal cleansing program, followed by a diet that is 70 to 80 percent vegetables, coupled with a tremendous selection of supplements that authors Robert and Shelley Young recommend to everyone, no matter what their age, gender, or state of health.

The Youngs point their fingers at candida as a main culprit in the poor health of many people. Unfortunately, they back up their claims with only vague references, such as "a 1991 study" and "a leading cancer researcher." Many readers may wish for more specific evidence, but instead will have to make do with enthusiastic recommendations, alphabetized lists of vegetables, and pleasing chapters with vegetarian recipes that taste good no matter how you feel about the diet as a whole.

Sprinkled throughout the book are short testimonials of people who were able to reverse cancer, improve their digestion, and lower their cholesterol by following these recommendations, and it's hard to argue with the cholesterol-lowering results that a 70 percent vegetable diet will achieve. Still, the medical value of much else in the book remains hotly contested, and as always, it's wise to check with your doctor before starting off in search of miracles. --Jill Lightner

The book is small and easy to toss in my purse when I go grocery shopping. It has the foods and condiments I need to follow this plan listed in convenient catagories.

Used as a reference by students of acupuncture, this is a hefty, truly comprehensive guide to the theory and healing power of Chinese medicine. It's also a primer on nutrition--including facts about green foods, such as spirulina and blue-green algae, and the "regeneration diets" used by cancer patients and arthritics--along with an inspiring cookbook with more than 300 mostly vegetarian, nutrient-packed recipes.

The information on Chinese medicine is useful for helping to diagnose health imbalances, especially nascent illnesses. It's smartly paired with the whole-foods program because the Chinese have attributed various health-balancing properties to foods, so you can tailor your diet to help alleviate symptoms of illness. For example, Chinese medicine dictates that someone with low energy and a pale complexion (a yin deficiency) would benefit from avoiding bitter foods and increasing "sweet" foods such as soy, black sesame seeds, parsnips, rice, and oats. (Note that the Chinese definition of sweet foods is much different from the American one!)

Pitchford says in his dedication that he hopes the reader finds "healing, awareness, and peace" from following his program. The diet is certainly acetic by American standards (no alcohol, caffeine, white flour, fried foods, or sugar, and a minimum of eggs and dairy) but the reasons he gives for avoiding these "negative energy" foods are compelling. From the adrenal damage imparted by coffee to immune dysfunction brought on by excess refined sugar, Pitchford spurs you to rethink every dietary choice and its ultimate influence on your health. Without being alarmist, he adds dietary tips for protecting yourself against the dangers of modern life, including neutralizing damage from water fluoridation (thyroid and immune-system problems may result; fluoride is a carcinogen). There's further reading on food combining, female health, heart disease, pregnancy, fasting, and weight loss. Overall, this is a wonderful book for anyone who's serious about strengthening his or her body from the inside out. --Erica Jorgensen

This is an excellent resource on WHY fasting can be beneficial and how to best accomplish it - different types of fasing, the benefits and potential problems with each, and how to accomplish the fast. If, however, you're looking for a book with specific receipies to follow while on a juice fast, the book is light.

Some good information, the rest is garbage 2 out of 5 stars.

I bought this book to better help me in managing my Crohn's disease during flare-ups. I pretty much bought the book based on the title and thought it would be helpful.

The author right off the bat says that if you are going to fast, you REALLY need to fast without ANY intake of food except water, but if you are going to juice fast, this is how you do it. He concentrated more on fasting than juice fasting, which seems to make this book title mis-leading.

He also goes as far as saying that self-purging (finger down the throat) may be required to purge the body of inpurities. Whoa, time out, that is a bit extreme.

I cannot give the book just one star, because there was some good information in there about fasting symptoms and other general tid-bits, but since this author has absolutely no credentials, I would seriously question anything he suggests to do.
