Editorial Review:

How did Don Mauer, who had been heavy all of his life, finally manage to lose weight and keep it off? Mauer-whose nickname was "Big Guy"-dieted for over thirty years. He tried every diet that came along. They all worked, but he would inevitably gain back what he lost, plus ten pounds more. Then Mauer discovered two words: low fat. An avid cook, he decided to revamp his own recipes, blasting away the fat and permanently losing 100 pounds in the bargain. The happy results of his success is Lean and Lovin' It: Exceptionally Delicious Recipes for Low-Fat Living and Permanent Weight Loss, which has over 200 low-fat recipes, ranging from 'Good Morning' Griddlecakes to Southern-Style Oven-Fried Chicken. Mauer goes to extraordinary lengths to replace fat with flavor in breakfasts like Buttermilk French Toast with Blueberry Honey (6.2g fat) and Lean Breakfast Sausage (1.8g fat). He transforms lean cuts of meat into rich-tasting dishes like Spicy Chinese Beef Sauté (7.5g fat) and Pork Tenderloin

Looked at in a store & didn't buy 3 out of 5 stars.
56 of 56 people found this review helpful.

I am allergic to milk and am always on the lookout for new cookbooks. I spent some time looking through this one in a kitchen store recently and decided not to buy, mainly because of the use of non-dairy cheese in many recipes. Yes, these cheeses are good for the lactose-intolerant, but they are not good for anyone allergic to milk. All of the good ones contain casein, a protein in milk that is often the cause of allergic reaction. There are truly milk-free cheeses out there, but they do not tend to melt well, and, therefore, often can't be used successfully in cooking.

I'm disappointed that someone who writes a book like this would title it "Totally Dairy-free" when it's not. "Non-dairy" or "Lactose-free" would be more appropriate.

That said, it was a nicely presented book and had some recipes that looked really good.

Editorial Review:

The latest statistics show that as many as 30 to 50 million Americans may be lactose-intolerant. Totally Dairy-Free Cooking offers lactose-intolerant people an alternative to medication--delicious, contemporary recipes made without any dairy products. This isn't "health" food--imagine rich, creamy pastas, savory soups, mashed potatoes, even ice "creams" so delicious you won't miss the dairy. Author Louis Lanza, chef at Josie's, New York's premier dairy-free restaurant, is one of the leading authorities on the subject. In his new cookbook, Louis explains exactly how to use ingredients like soy milk and soy cheeses, now available in supermarkets everywhere.

Totally Dairy-Free Cooking is absolutely the best cookbook on the subject. The recipes are so delicious, anyone--lactose-intolerant or not--will enjoy them. For people who are trying to cope, medication-free, without dairy products in their diet, this cookbook is an essential purchase.

Dana does it again! 5 out of 5 stars.
51 of 51 people found this review helpful.

My boys and I have had a smoothie every morning for breakfast for the past two weeks--we're hooked! I'm a type 1 diabetic, and find that a smoothie like this works perfectly for a great meal replacement. They keep me satisfied until the next meal, and most importantly, they really taste great. The carb counts are accurate and my blood sugar remains stable after having one. My kids aren't on a restricted carb diet, but they love the taste too! If you're already a low-carb dieter, you'll most likely have all the ingredients in your pantry. Enjoy!

Editorial Review:

Smoothies are one of the most popular food trends—they are healthy meal replacements, and easy, on-the-go snacks. But, the problem is, most are high in carbs. Not anymore! Best Cookbook Purchased 5 out of 5 stars.
12 of 12 people found this review helpful.

First, Thank You Amazon for your speedy delivery. I had this book in 3 days.
I purchased this book not to become a vegetarian but to learn to cook healthier foods. I must say that after reading and trying the recipes Lyndsay and Ariane did a wonderful job. This book actually informs the reader on the health benefits of a more natural diet using whole grains and more fruits and vegetables. They do not say you have to be a vegetarian they just give you information and guidelines for a healthier lifestyle.
If anyone has tried Vegetarian cookbooks before (as I have), and thrown them out because they were complicated with ingredients you can't find, try this book, I had almost everything in my kitchen already, there are no funky things to go out and find, and my sons (9 and 11) have decided they like soy milk better than regular milk. Best book I have ever purchase. Thanks goes to Lyndsay and Ariane.

Editorial Review:

Actress Lindsay Wagner and coauthor Spade present a unique collection of recipes for delicious, high-fiber, low-fat meals that will inform experienced vegetarian cooks and make it easy for novices to make the transition to a meatless diet.

Good News

The good fats -- butter, chocolate, coconut, olive oil, avocado, fish, and shellfish, among many other favorites -- are not only delicious, they're good for your brain, heart, immune system, hormones, skin, memory, and emotional well-being, and can also help you lose weight.

It's a fact: Not all fats are bad. Good fats slow the effects of aging, improve mood and memory, boost the immune system, and protect against stroke and cancer. And the most surprising news of all: The right fats are great tools for weight loss, making you feel full longer and jump-starting your metabolism.

In Good Fat, bestselling low-carb guru Fran McCullough debunks all the fat myths, demystifies cutting-edge science, and -- fork in hand -- reveals the simple secrets to eating well and losing weight. Here she teaches you how to:

  • identify the good fats -- and enjoy their good taste
  • avoid trans fats and other bad fats that damage health and pile on the pounds
  • combine low-carb foods with beneficial fats, proteins, and fresh ingredients for maximum energy
  • lose weight by eating more of the foods you crave
  • prepare more than 100 simple, delicious recipes to put the good fat back on your table

...and much more. Part of the groundswell that prompted the Food and Drug Administration to require mandatory listing of trans fats content on food labels by 2006, Good Fat is an inspirational resource for the millions of Americans who have perceived the benefits of a low-carb lifestyle and are looking to live a healthier, happier life.

    Editorial Review:

In The Taste for Living WORLD Cookbook, Mike Milken has once again commissioned chef Beth Ginsberg to transform more than 100 global favorites-- including quiche Lorraine, Spaghetti Bolognese, fajitas and crme brulee, into practically fat-free recipes loaded with cancer-fighting nutrients and soy protein. These low-fat dishes help fight heart disease too.

The ink was barely dry on the first Taste for Living Cookbook (CaP CURE, 1998), when chef/author Beth Ginsberg began perfecting the new recipes for her second collaboration with philanthropist and financier Mike Milken. The Taste for Living WORLD Cookbook: Mike Milken's Favorite Recipes for Fighting Cancer and Heart Disease (CaP CURE, October 1999, distributed by Time-Life) explores the vibrant international flavors that have become so much a part of American cooking today.

Ginsberg, a Culinary Institute of America graduate and natural foods chef, is a master at transforming high-fat classics such as spaghetti Bolognese, quiche Lorraine and egg rolls into soy-rich fare that meets the high standards for healthfulness and flavor that Mike requested when she became his personal and corporate chef.

"Don't give up the dishes and the flavors you love," encourages Ginsberg. "Change the ingredients. Adapt your cooking methods. You dont need lots of fat for food to taste great."

When Mike Milken was diagnosed with advanced prostate cancer in 1993, he quickly swore off the high-fat fare that he had eaten most of his life. He also founded CaP CURE, the Association for the Cure of Cancer of the Prostate. Working with some of the nation's top cancer researchers, he recognized the vital importance of cutting fat and increasing the consumption of soy protein to 40 grams daily--not an easy feat for a man who used to eat a fried-egg-and-bacon sandwich every morning.

L.A. chef/ restaurateur Beth Ginsberg convinced him that she could create healthy versions of his favorite dishes. Through the Taste for Living cookbooks, Mike and Beth share these great recipes with people who love to eat and people who want to lower their risk of cancer and heart disease through a healthy diet.

The more than 100 recipes in The Taste for Living WORLD Cookbook are all easy to follow, and each is accompanied by a complete nutritional analysis. Colorful icons tell the cook how long it takes to prepare a recipe from start to finish. Most are well under one hour.

The all-new Taste for Living WORLD Cookbook is organized into 14 complete menus, each featuring the cuisine of a particular country or region. Youll find some of the best known dishes from the French, Italian and Chinese repertoire. Youll be tempted by the aromatic flavors of the Indian, Caribbean, Mexican and American offerings. Individual menus offer appetizers, main course options and scrumptious (and wonderfully healthful) desserts.

As a bonus, the final section focuses on Mike's love for American junk food. From corn dogs to chocolate cupcakes, doughnuts to deep-dish pizza, you'll find recipes for the foods you thought were forbidden in a healthy diet. Ginsberg has not only taken the fat out of these notorious bad-guys of the American menu, she's enriched their nutrition profiles with soy protein, added fiber, vitamins and crucial micronutrients.

The Taste for Living WORLD Cookbook doesn't rely on exotic, hard-to-find ingredients to produce flavorful international food. Everything you need--from tofu, tempeh and tamari soy sauce to assorted grains, beans and produce--is available at large supermarkets or natural food stores nationwide. A special section at the back, "The Healthy World Pantry" provides additional information about all the ingredients.

More than a collection of recipes, The Taste for Living WORLD Cookbook presents up-to-date nutrition facts in the battle against cancer and heart disease. Sidebars look at different foods currently being studied for their potential roles fighting these chronic diseases. Special contributors David Heber, M.D., Ph.D., Director of the UCLA Center for Human Nutrition and Dean Ornish, M.D., Director of the Preventive Medicine Research Institute in Sausalito, CA, provide the scientific basis for why this diet works.

Scores of luscious full-color photographs from award-winning Burke-Triolo Studios in Los Angeles prove that low-fat, healthy food can and does look absolutely delicious.

CaP CURE, the Association for the Cure of Cancer of the Prostate, located in Santa Monica, California, is a nonprofit public charity that rapidly identifies and funds promising prostate cancer research. CaP CURE scientists have developed revolutionary vaccines, nutritional therapies and other treatments that give hope to prostate cancer patients. CaP CURE-supported researchers are currently conducting more than 70 human clinical trials of various therapies. The organization also works to raise public awareness of the role that diet plays in reducing the risk of cancer and other chronic diseases. All profits from The Taste for Living World Cookbook go to further CaP CURE's research.

From cacciatore to sukiyaki to enchiladas, and from tiramis to banana pudding, The Taste for Living WORLD Cookbook is for anyone who cares about enjoying good flavor and good health.

This book is an easy read with a description of Gary's diet that was to the point, informative, and made perfect sense. It was just like I was speaking directly with him and he even answered my questions as I thought of them. I like all of his books, but this one was of the most practical help to me in understanding and being able to follow his diet. I have made some of my own changes to my regular diet by drinking 'soyffee' a drink made from soya beans which I found on the net at www.S oy c of f e e.c om. Its a caffeine free substitute for regular coffee and very tasty.

"What would you give to have a great body without constantly dieting? Is it worth thirty minutes of your time three days a week? Would you like to liberate yourself from the drudgery and monotony of constant dieting? I'm going to make you a promise that cannot be made by any other weight-loss program. Editorial Review:

If a skimpy salad doused with a tasteless dressing is your idea of lowfat dining, hold on to your calorie counter. Lowfat cooking has come a long way. In fact, many of your high-calorie food favorites have an enticing, healthier equivalent in a lowfat version. Think chili. Potato pancakes. Or even cheesecake. It’s true. If done right, bite for bite, lowfat cooking can be as generous in flavor as its high-fat counterpart. And once you (and your body) have begun to sample the benefits of a lowfat menu, chances are you’ll turn lowfat cooking into a permanent lifestyle change.

With the help of Lynn Fischer, celebrated host of two TV cooking shows, Lowfat Cooking For Dummies helps you prepare meals worthy of a high-class health spa. In practically no time, you’ll see how simple and fun it is to slenderize your kitchen pantry and get your cooking regimen in gear. From finding hidden fats to reading labels, the book gives you the skinny on:

    • Cholesterol, saturated fats, trans fatty acids—what they are and where they come from
    • What “lowfat,” “fat-free,” and “reduced fat” really mean
    • Tips on stocking a lowfat pantry—including what canned and packaged foods to keep (including pretzels, popcorn, chips, and cookies!)
    • What oils, condiments, and flavorings to use—including a table of oils indicating saturated fat content and a comprehensive list of herbs and their uses
    • Meat, poultry, fish, and eggs—tips on finding sources of lowfat red meat, what lean really means, and telling “good” eggs from “bad”

Plus Lowfat Cooking For Dummies brings you quickly up to speed on the joys of lowfat cooking—making your transition into a lowfat menu as delicious as it is painless. You’ll reexperience old favorites like French Toast or a BLT or Oatmeal Raisin Cookies and discover how cutting calories in no way impairs taste. And you’ll get a fresh reinvigorating take on traditionally healthy salads, as well as a host of entrees:

    • One-pot Soups and Casseroles—including Chicken Soup with Vegetables, Lentil Soup, Chili, and Pork and Garbanzo Bean Stew
    • Fish and shellfish—including Cod with Ginger-Orange Sauce, Herbed Mahi Mahi, and Shrimp and Crab Gumbo
    • Meat and poultry—including Meat Loaf, Sweet and Sour Pork, and Roast Chicken
    • Sandwiches—including Chicken Salad, Deviled Ham, Egg Salad, Feta Cheese Hamburgers, and Grilled Cheese

The book is chockfull of hints on how to turn usually high-fat fare like Hollandaise Sauce and White Sauce into something light and tasty. Desserts such as Strawberry Cheesecake and Peach and Blackberry Tart can, at last, be enjoyed as a guilt-free pleasure. Brimming with suggestions for healthy, lowfat eating on every page.
