I love this book! I usually get a cookbook, make a few recipes, and set it aside, never to be used again. But The Uncheese Cookbook is different. I've made at least one delicious recipe per week since I bought it. My girlfriend and I especially love the Chedda Soup with cauliflower and the Potato Chowder. The Nacho Cheez sauce is also wonderful. I highly recommend this book to all vegans, lactose intolerant people, and anyone who wants to eat less dairy but still enjoy delicious comfort food.

I'm not sure what kind of "real dairy cheese" these reviewers are used to eating that they are comparing these recipes to. I have tried several recipes and they are NOTHING like dairy cheese. We use the nacho dip recipe for mac and cheese but all the others that we've tried have been bland, not tasted like cheese, and/or been gross. The block cheese sort of gets the texture but the 2 we tried were nasty! And my husband eats most anything! I miss real cheese and this book didn't really help.

Try this cookbook FIRST if you are allergic to Milk!!! 5 out of 5 stars.

I work full time, I have 2 kids, I don't have time to make all sorts of substitutes and marinate stuff for hours. This is simple, easy to follow book with results that are really tastey. INCLUDING DESSERTS!!! The whole family ate these reciepes no questions asked! They didn't even know that they were eating dairy free until I told them a week later. I have yet to have one reciepe flop!!
Some of the manufactures of subst items she lists are A LITTLE outdated, but we all know to check labels and I still found her tips very useful. I had been adjusting to not eating at all when in doubt, with this book I am starting to explore more in milk free cooking because I have less doubts.

As for "Cooking Without Milk: Milk-Free and Lactose-Free Recipes" Light a match and just burn your cash..not worth the paper it's on. I mean...Do you really need a recipe for a peanut and butter sandwich?

I bought a copy of this book after reading a newspaper article on the author that also featured some of the recipes included in the book. It's a great addition to my cookbook collection. Although I don't have a problem with dairy foods, I have some friends that can't tolerate them, so I bought this book to help me create a dairy-free dinner party. It was a huge success. I found the recipes easy to prepare and my friends raved about the dishes I served. The biggest "hit" on the menu was the Coconut-Lime Seafood Stew and I had to prove that the Flourless Chocolate Almond Cake contained no dairy ingredients. I found the book to be very informative and liked the fact that I could find all the ingredients at a local grocery store. My "dairy challenged" friends all want a copy of this book, so part of my Christmas shopping is already taken care of!! Thanks Denise

Brilliant book - simple, useful and written by someone who went through the process from scratch

An increasing number of people on the autism spectrum are turning to the gluten and casein free diet and finding that many of the more troublesome symptoms are significantly alleviated. Coeliacs, and those with lactose and other intolerances, will also find a wealth of useful ideas for cooking without gluten or dairy products and expanding what may initially seem a very restrictive repertoire of possible meals.

I love this cookbook. It has great information on all types of sweeteners and goes through many different types of oils and flours too. The main ingredients she uses in this book for sweeteners are brown rice syrup, barley malt syrup and some have maple syrup. It is pretty easy to find the ingredients and the directions are easy to follow although I am a fairly experienced baker so I do "add lib" when I cook and find that the end result has been great. I made the lemon cake with the sauce but minus the lemon tofu cream because I have a slight allergy to soy. Tofu is definately a required taste and she uses very little in this book and it can easily be omitted.
She does use carob in some recipes so if you do not like carob you can just use cocoa powder or non dairy tropical source chocolate chips. There are quite a few color photos too.
I look forward to making more recipes from this book and the book is worth buying just for the eye opening info she provides on chemicals and how some of our ingredients are processed. It really motivates you to try to find a more natural alternative.

Leaveana Kirschenbaum fills The Diary Free Gourmet with some of the tastiest, terrific dairy-free meals you will ever eat. The Spinach Lasagna in this book is one of the best Lasagnas I have ever made. I have also received rave reviews on the Lemon Coconut Tart. This is an excellent collection of recipes that any chef would love to have at their disposal

My partner complained of a lack of options when I told him he should stop eating dairy. (He has a dairy sensitivity and was at the time avoiding cow's milk, but still eating goat dairy.) Then I found, among other things, this book at the local natural foods store, and it disproved that theory quickly.

Our household agrees that the cheese sauces work very well. The hard cheeses, I found that I liked, but my sweetie disagreed. The "Melty Pizza Cheeze" is one of his favorites, whereas I don't much enjoy it, probably for the same reason why he likes it ("It's exactly like squeeze cheese! Except all, like, natural and healthy and stuff!")

There hasn't been a single thing we've tried from this book that *one* of us hasn't liked, and the most valuable thing in it is the substitution information, which allows us to make familiar recipes with different components -- such as the sweetened condensed soymilk recorded here, which made a fabulous key lime pie. (We couldn't even taste the difference.) It's allowed my partner to continue eating variations on "normal food" that he otherwise would have missed, and which the rest of the family enjoys as much in their altered forms as we do the standard versions. High praise.

Furthermore, although this is not an issue for us, I'm pleased by the sensitivity of the book to people with soy allergies; many of the recipes have variations made with non-soy products, which I'm sure must come as a great relief to those who can't have either milk or soy.
