Not just a recipe book but a comprehensive survey of culinary delights from the eastern Indian state of Orissa, better known for the architectural splendors of its ancient temples in Konarak and Puri.

The author speaks of her own experience in the context of the food she describes- meticulously documented by her as she passes through her grandmother's kitchen to her mother's overseen by the family cook. The little anecdotes that accompany some of the recipes provide an unusual glimpse into the middle-class Indian existence the author experienced while growing up in that vast and fascinating country.

Comparing and contrasting the techniques refined over generations, with that from diverse and distant cultures, augmented with an extensive bibliography, the book should appeal to a wide spectrum of readers --from the faltering beginner to the serious cook. An unusual chapter on the family cook's contribution might make the orthodox in you squirm but nevertheless offers a glimpse into the evolution of "restaurant-food" in urban Orissa.

A scientist by training, the author injects her own scientific-humor into the writing that also makes the book an amusing read.

Sample a recipe from Arabian Delights from A Royal Wedding Menu: Eggplant, Tomato, and Chili Pepper Salad ( Salata Bat njan bil Tomatum wa Filfil) This is a hot and healthy salad that takes only minutes to prepare. It works well on buffets or as a simple side dish during a busy weeknight. When choosing eggplants, look for small ones with smooth, shiny skin and no bruises. Tomatoes should be bright red, firm, and kept outside of the refrigerator to yield the best flavors. 2 1/2 cups canola oil, divided 4 small (4- to 5-inch-long) eggplants, sliced into 1/4-inch-thick slices 4 roma tomatoes, sliced into 1/4-inch-thick slices 3 green chili peppers, seeded 1/4 cup distilled white vinegar Salt, to taste Freshly ground black pepper, to taste Pinch of chili powder or paprika Plain yogurt for garnish, if desired Heat 2 cups canola oil in a large frying pan over medium heat. When oil is hot, carefully lower eggplant slices into pan. Do not crowd skillet. Fry eggplant 3 to 5 minutes per side until lightly golden and cooked through. Remove with a slotted spoon and place onto a platter lined with paper towels. Continue with remaining eggplant. Fry roma tomatoes in the same manner and place onto a platter lined with paper towels. Fry chili peppers in the same manner and place onto a platter lined with paper towels.

Whisk remaining 1/2 cup canola oil, vinegar, salt, pepper, and chili powder or paprika together in a small bowl to form a dressing. Place fried eggplant, tomato, and pepper slices onto a large serving platter. Top with dressing. Taste and adjust seasonings if necessary. Serve at room temperature. Serves 4.

What a great tour of the Lebanese people, food and drink! First of all I am most impressed with the pictures. Best that I have seen in any cook book about Lebanon. Secondly, the wonderful pictures of the people and the scenic areas of Lebanon made me feel like I was back there visiting my cousins once again. I was amused at the wonderful coverage of the art of making Arak. Our Mezze wouldn't be special with out that wonderful liquor. This book is one of the best values ever when it comes to getting the essence of the food, the culture and the beauty of Lebanon. To Michael and Norbert, the authors: Thank you so much!

I am Turkish and (so I am told) a very good cook for 30+ years. I found some recipes in this book (Klasik kofte, salepli dondurma) that I could not find anywhere else and worked wonderfully.

If you are having diificulty finding ingredients, try online sites like penzeys.com or tasteofturkey.com.

The "traditional" food of Israel is a mix of Middle East with Russian, German, Polish, & a wide range of cultures. Capturing the flavor of Israel is a challenge. "Taste of Israel" not only captures the tastes of the country, it shares the history, the people behind the process, culture, art, current events, and blends it all into a fantastic recipe to capture the spirit of Israel. The photography is fantastic, clear, sharp and capturing the essense of the country. Excellent as a gift book to honor the country or to keep in your cookbook racks. Lovely design and layout. Reprinted in 1998 and shame on Amazon.com for not having the new version online yet! I want to buy one for all my friends and family as a gift. Publisher: Steimatzky.
